Tipsy Tuesday – A Kicked Up Strawberry Lemondade

My daughter and her husband recently went to the theater with my husband and I and they served us one of the most delicious and fresh tasting drinks I have had in a long time. I just had to try and make a similar version at home. Here was my take on a Strawberry Lemonade.

Ingredients:

For Strawberry Vodka:

  • 1 pint organic strawberries
  • 1/2 bottle (750ml) Vodka (can use inexpensive brand)

For Strawberry Lemonade:

  • 2 parts strawberry vodka
  • 4 parts lemonade
  • Slightly crushed strawberries
  • Lemon slices

Directions:

For Strawberry Vodka:

Use only organic strawberries as vodka acts as a solvent and you want to extract only the juice of the berries not additional pesticides or chemicals.

Rinse strawberries. Remove stem and cut into quarters.  Place cut-up strawberries in a large glass jar that comes with a lid. Pour in the vodka and secure lid. Shake well. Store in a cool dark place for approximately 3-7 days, shaking jar once a day.  You can check to see if the flavor has been absorbed on day 3.  If the strawberries are white and the vodka pink, extraction is complete.

When ready, strain with cheese cloth and discard strawberries (they should not have any flavor left). Store in refrigerator for up to 2 weeks or keep in freezer for longer.

For Strawberry Lemonade:

In a cocktail glass, add strawberry vodka and lemonade, a couple tablespoons of crushed strawberries and 1-2 lemon slices. Serve over ice with straw and enjoy!

Serves 8

Ingredients:

  • small cucumber, scrubbed well
  • 1/3 cup sour cream
  • 1 Tablespoon dried dill weed
  • fresh ground pepper, to taste
  • 1 jar red salmon caviar
  • fresh dill sprigs, garnish
  • 8 thin slices whole wheat bread
  • butter

Directions:

Slice cucumber into 1/4″ rounds.  In small bowl mix sour cream, dill, and pepper.  Place one teaspoon of the sour cream mixture on each cucumber round.  Top with caviar and dill sprig.  Toast bread, cut into shapes using your favorite cookie cutter, and butter.  Place toast shapes around outside of serving platter, cucumber rounds in the center, and serve immediately,.

We just returned from the El Dorado Royale Resort in Tulum, Mexico where one of their featured lunch restaurants, Health Bar, had an out-of-this-world smoothie bar.  Here are two of my favorites that I will be trying to recreate at home.  Now, where can I find some cactus?

Cocoa Almond Milk Iced Latte

A decadent latte with 1/2 the calories!

Cocoa Almond Milk Iced Latte

Prep – 10 minutes – Chill – 1 hour – Serves: 8

Ingredients:  Cocoa Almond Milk Iced Latte @2CookinMamas

  • 2 cups cold water
  • 1/2 cup espresso (or French) roast coffee
  • 2 cups organic almond milk (unsweetened vanilla, chocolate, or plain)
  • 2 packets instant hot cocoa mix (gluten-free mixes available)
  • 1/2 teaspoon almond extract
  • Ice cubes

Directions:

Brew coffee, with 2 cups cold water, in drip coffeemaker according to manufacturer’s instructions.  Stir in milk, cocoa mix, and almond extract until well combined.  Refrigerate mixture for 1 hour.  Serve over ice.

Only 50 calories per serving!!!

Hot Dog Perfection

hotdogsJuly is National Hot Dog Month so today we honor the hot dog with 5 delicious and creative new toppings.

  1. Avocado Chip Dog – 1 hot dog topped with lime-infused avocado, crumbled crunchy potato chips, slivered onions and plum tomatoes.
  2. Chipotle Chili Cheese Dog – 1 hot dog topped with chipotle, chili powder, jalapeño peppers, and bacon crumbles.

  3. Hawaiian Dog – 1 hot dog topped with caramelized onions, sweet teriyaki sauce, sesame seeds, and grilled pineapple.
  4. Summer Dog – 1 hot dog topped piled high with vinegar-tossed tomatoes, crunchy corn kernels, lettuce, and onion.
  5. Mac & Cheese Dog – 1 hot dog topped with your favorite macaroni and cheese mixture and a pinch of chili powder.

watermelonstarsWatermelon stars!  Pretty simple – just cut watermelon into 1/2″ thick slices and use a star cookie cutter to make cutouts. Serve in a bowl or around your main dish.  You can also infuse them in a pitcher of water for a yummy & refreshing drink.

Ingredients:

  • Handful blueberries
  • 6 sliced strawberries
  • 2 pineapple slices (cutout like stars)
  • 1 cup Triple Sec
  • 1/2 cup berry flavored vodka
  • 1/2 cup fresh lemon juice
  • 1/2 cup simple syrup

Directions:  Combine all ingredients, stir, and refrigerate for a minimum of 4 hours prior to serving.

Tipsy Tuesday – Key Lime Pie Martini

We love the Florida Keys and there is nothing better than their famous key lime pie and anything that tastes like it! A friend, now a very good friend, (lol) gave me this recipe that he had received from the White Tarpon in Key West. It really does taste like key lime pie and, if you want to go all out, you can even add a little vanilla ice cream for an even richer taste. Woohoo!

Ingredients:

Key Lime Pie Martini

  • 2-oz. vanilla vodka
  • 1-oz. Licor 43
  • 1-oz. Rose’s lime juice
  • 1-1/2 oz. sweet & sour bar mix (see easy recipe below for your own homemade mix)
  • Garnish: graham cracker crumbs, lime slices, vanilla ice cream

Sweet & Sour Bar Mix

  • 1 cup sugar
  • 1 cup water
  • 1 cup lime juice
  • 1 cup lemon juice

Directions:

Prepare bar mix by heating sugar and water in a small saucepan. Stir constantly until sugar is dissolved. Remove from heat and stir in lime and lemon juice then store in refrigerator. Make sure it is cool prior to mixing with cocktail.

Tp make martini, add 1/2 cup of crushed ice to a shaker then pour in martini ingredients and shake well.

Prepare martini glasses by rubbing rims with a slice of lime then dipping into graham cracker crumbs. Pour drink into glasses, garnish with a lime slice and enjoy!

Crockpot White Chicken Chili

With so many chili recipes out there, it’s hard to find the perfect one.  So, I combined three of my favorites into this easy & delicious meal made right in the slow cooker.

Wine Pairings: St. Michael Eppan Pinot Grigio and White Wines Borges Douro Reserva 2005 & Mas de la Dame 2009

Crockpot White Chicken Chili

Prep Time: 30 min – Cooking time: 8-10 hours

Serves 6

Ingredients:

  • 1 pound chicken breast, cubed – fresh or frozen
  • 2 – 15 oz. cans white beans
  • 1 – 15 oz. can of white corn
  • 1 sweet onion, chopped
  • 1 clove garlic, minced
  • 1 package taco seasoning
  • 1 – 8 oz. canned chopped mild green chilis
  • 1 – 10.75 oz can cream of chicken soup
  • 1 – 14 oz. can of chicken broth
  • 2 tbsp. lime juice
  • 1/2 cup fat-free sour cream, optional topping
  • 1/2 teaspoon Tabasco, optional topping
  • chopped cilantro, shredded cheddar cheese, tortilla chips, for garnish

Directions:

Place cubed chicken in bottom of slow cooker and top with beans, corn, and onion.  Mix garlic, taco seasoning, chilis, soup, broth, and lime juice in a medium bowl and pour over the chicken mixture.  Cover Crockpot and cook on low for 8-10 hours.

Prior to serving, shred any remaining chicken cubes with a fork or use a potato masher.  Add toppings and enjoy!

Tipsy Tuesday – Key Lime Colada

Key Lime ColadaAh, this frozen drink, similar to a piña colada, brings to mind our vacations in Key West, the soft breezes, music floating on the air and great times along Duval Street. The first Key Lime Colada we ever had was at Rick’s Tree Bar on Duval and we instantly fell in love with the refreshing taste. They wouldn’t part with their recipe but, after some experimentation, I made one that was pretty close. And it sure was fun trying!

Key Lime Colada

Ingredients:

  • 1 oz. Liquor 43
  • 2 oz. Vanilla Rum (or try the new Key Lime Rum)
  • 1-1/2 oz. Key Lime Juice
  • 1 oz. Pina Colada Mix or coconut cream
  • 1-1/2 oz. Pineapple Juice
  • 1 teaspoon sugar
  • 1 cup ice

Directions:

Combine all of the above ingredients in a blender. Prepare margarita or martini glasses by rubbing lime around the edge and dipping the rim in graham cracker crumbs. Pour Key Lime Colada mixture into 2 glasses and garnish with slices of lime.

Serves 2.

It is getting mighty hot down in here in Florida so refreshing drinks are in high demand!  Here are 2 summer sips that will have you cooling down in no time.

Strawberry-Thyme-Cocktail

Strawberry-Thyme Lemonade

Serves: 8 – Total Time: 45 minutes, with chilling

Ingredients:

  • 1 cup sugar
  • 8 thyme sprigs
  • 1 cup water
  • 1 quart strawberries, hulled & sliced
  • 1.5 cups fresh lemon juice
  • 5 cups water
  • vodka (optional)
  • thyme sprig (garnish)

Directions:

Boil sugar, thyme sprigs, and 1 cup water in small saucepan until sugar is dissolved.  Remove from heat, let cool, and discard thyme sprigs.  Combine thyme syrup with strawberries, lemon juice, and 5 cups water in pitcher and chill for at least 30 minutes.  Serve over ice with a fresh thyme sprig and a splash of vodka.

Pineapple Lime Coconut Spritzer

Serves 8 – Total Time: 45 minutes, with chilling

Ingredients:

  • 3 cups pineapple juice
  • 2 cups coconut water
  • 1/2 cup fresh lime juice
  • 2 cups club soda or sparkling water
  • 1/2 pineapple, cored & cut into triangles (garnish)
  • rum (optional)

Directions:

Combine pineapple juice, coconut water, and lime juice in a large pitcher.  Chill for 30 minutes.  Add in club soda and immediately serve over ice.  Garnish with pineapple wedges and add in a splash of rum.
